Challenge 2, Day 1: Mama's Beef Omelet Recipe

My mom had her kitchen classics. Mind you, she did not cook that often with her high-stress job and we spent many, many dinners with takeout. But when she did find herself with a little extra time and energy, she put some great food on the table to compliment white rice. Even though I am not eating white rice, this dish is great without it! I modified it a bit, but here it is: the beef omelet.

Ground beef omelet


Ingredients
1 lb ground beef
4 eggs
1 TBSP pressed garlic
1 cup frozen spinach
10-20 cherry tomatoes
1 TBSP pepper
Salt to taste
Parmesan cheese to taste
Olive oil

Directions
Start by pouring a bit of olive oil in your saucepan and set the heat to medium. Sauté the garlic, spinach,  and tomatoes, then place in a medium-sized mixing bowl. Cook the ground beef with pepper and salt before putting it in the mixing bowl. Scramble the eggs and pour over the mixture. Mix well. Cook the ingredients together until eggs are done. Throw a little parmesan cheese into the mix and voila!
